Heat until the sugar fully dissolves and forms a syrup. Add Spices: Once the syrup is ready, add asafoetida, ajwain, black pepper, turmeric, salt, and black salt. Continue boiling the syrup for another 5-7 minutes to thicken it slightly. Add Lemon Juice: Allow the syrup to cool a bit, then stir in the lemon juice. Combine the Amla and Syrup: Add the boiled amla pieces to the syrup, mixing well. Let the amla cook on low heat for another 5-7 minutes to fully absorb the syrup and spices. Dry the Amla Candy: Remove the amla pieces from the syrup and spread them on a plate or tray to dry. Place them in the sun for 1-2 days, allowing them to dry completely.
